Mediterranean Potato and chicken bake ​

INGREDIENTS 
  • ​1 1/2 kilos of chicken (I use legs thigh and breast)
  • 1 large brown onion sliced
  • 6 large potatoes or 12 chat potatoes
  • 1 tin diced tomatoes
  • 1 1/2 cups water
  • 5 whole bay leaves
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon of olive oil
  • 2 table spoons tomato paste

Preheat oven to 180 degrees Get a large baking pan Peel potatoes if you choose large ones cut them in half and cut a slit in the top. Lay them on the bottom of the pan. Spread half of the onion over them and 5 bay leaves scatters around. Place chicken pieces on top of the potatoes.

Put the remainder of the onions and bay leaves spread out evenly. Open your tin tomato and pour it on top ensuring that it is evenly distributed. In the tomato Tin put your tomato paste, cumin and salt with Luke warm water and mix until combined. Pour over chicken and potatoes.

​Cover the meal with aluminium foil and cook for 1 hour then remove the foil and cook for a further 1 hour. To make the chicken really tender you can cook it with the foil for 2 hours and then a further 1 hour without it or until brown.

EASY to make PIZZA DOUGH

Ingredients
  • 4 cups plain flour
  • Teaspoon salt
  • 375 ml warm water
  • 1 sachet dry yeast
  • Pinch sugar
​Method
​Combine water, yeast and sugar in a small bowl. Set aside for 5 minutes or until foamy.
Combine the flour and salt in a large bowl and make a well in the centre. Add the yeast mixture and oil. mix until all ingredients are combined. Use your hands to bring the dough together in the bowl.

Turn the dough onto a lightly floured surface and knead for 10 minutes or until smooth and elastic. Place in a clean bowl and Cover with clear wrap and set aside in a warm place to rise for 30 minutes or until dough doubles in size.

Once risen you can separate and make your bases. Make sure you put flour on the bench so that it doesn't stick.

This will make approx three standard pizza bases.

Haloumi and olive bread muffins

INGREDIENTS 
3 cups wholemeal self raising flour
1 1/4 cup water
1 egg
3 tablespoon olive oil
2 pinches salt
1 handful pitted black olives chopped into small pieces
2 balls Haloumi chopped roughly into aprox 1cm size

Preheat oven 180 degrees Mix all ingredients Place in greased muffin tray Bake for 25-30 minutes.

NB: if you really mix the ingreudients well it will turns brown colour from the olives like pictured The perfect savoury treat

APPLE SLICE / CAKE

INGREDIENTS ​
  • 2 cups self raising flour
  • 1 cup sugar 125 gram butter - melted
  • 1 egg
  • 3 apples diced (put in microwave for 1 minute and drain water)
  • 3 table spoons water 1/2 teaspoon of cinnamon sugar Once in pan Cinnamon sugar for top Mix all ingredients and put into a lined cake tin.

Sprinkle cinnamon sugar on the top and bake at 180 degrese for 40 minutes.
​It should be a nice golden colour and the skewer should come out clean

easy to make Chocolate croissants

INGREDIENTS
  • 2 sheets frozen puff pastry, partially thawed
  • Cadbury chocolate block or nuttella 
  • 1 egg, beaten
​

Preheat oven to 180°C. grease a baking tray or use baking paper.
Cut each sheet of pastry into thirds and then sixths, so that you have six long skinny triangles.. Spread 1 tablespoon chocolate-hazelnut or place cube of cadbury chocolate over each triangle, leaving a 1.5cm border around all edges.

Brush pastry edges lightly with egg. Roll up each square from corner to corner, pressing gently to seal. Shape pastry rolls into croissants. Place on prepared tray. Brush with egg.Bake for 20 minutes or until pastry is golden and puffed. Serve warm
