Mediterranean Potato and chicken bake
Preheat oven to 180 degrees Get a large baking pan Peel potatoes if you choose large ones cut them in half and cut a slit in the top. Lay them on the bottom of the pan. Spread half of the onion over them and 5 bay leaves scatters around. Place chicken pieces on top of the potatoes.
Put the remainder of the onions and bay leaves spread out evenly. Open your tin tomato and pour it on top ensuring that it is evenly distributed. In the tomato Tin put your tomato paste, cumin and salt with Luke warm water and mix until combined. Pour over chicken and potatoes.
Cover the meal with aluminium foil and cook for 1 hour then remove the foil and cook for a further 1 hour. To make the chicken really tender you can cook it with the foil for 2 hours and then a further 1 hour without it or until brown.
