VILLAGE STYLE TURKISH BREAD
Combine flour, yeast, sugar and salt in a bowl. Make a well in the centre, then add water. Use one hand and mix until combined, then use other hands to add more flour or water if needed to bring the dough together in the bowl.
Turn the dough onto a lightly floured surface and knead for 15 minutes or until smooth and elastic. Place dough in the bowl and Cover with a damp tea towel. Set aside in a warm, draught-free place for 1-1 1/2 hours or until the dough has doubled in size
Preheat oven to 180°C. Cut dough into small fist size portions on a lightly floured surface and with floured hands and roll portions into rectangle loaf size pieces then sprinkle sesame and nigella seeds on top the place on greased tray cut three slits across the loaf and set aside in a warm, draught-free place for 10 - 15 minutes.
Place the baking tray on the middle shelf of the oven. and let it cook for about 40 - 60mins or until golden brown ,Remove tray from oven Cool on a wire rack.
Best served for breakkie with fresh olives, tomatoes, halumi and cucumber .
